The hospitality: Hervé and Claire Cordonnier have been welcoming people to their boutique and artisan curing workshop since 1998.
The products: Irish and Scottish salmon are selected fresh (never frozen), for their soft and delicate flesh. They are not fed any animal byproducts and are GMO-free.
Their expertise: Each salmon is dry salted with Guérande salt, delicately cold smoked on beech wood, with no additives or preservatives. Freshness, finesse and perfect mastery are in all the stages of production!
